Plateau Soup

Materials:
- 1 cup of yoghurt
- 3 tablespoons of flour
- 6 cups of water or chicken broth
- 1 egg yolk
- Half a cup of rice (optional)
- 2 tablespoons of butter or oil
- Salt
- Dried mint or fresh mint leaves (for serving)
How to make:
1. Heat butter or oil in a pan. Add flour and cook, stirring, until fragrant and lightly roasted.
2. Slowly add water or chicken broth to the roasted flour and stir continuously. Be careful to stir constantly to avoid lumps.
3. When the mixture in the pot starts to boil, add the rice and cook until the rice is tender, about 15-20 minutes.
4. In a separate bowl, whisk the yogurt and egg yolk.
5. Add the yogurt mixture little by little to the soup in the pot, stirring constantly. Keep stirring the soup while adding the yogurt mixture, otherwise the yogurt may curdle.
6. After adding the yogurt mixture, cook the soup for a few more minutes, adjust the salt and remove from the stove.
7. Before serving, sprinkle dried mint or fresh mint leaves on top and serve hot.
